What did you Vegans Eat Today? :)

I would really love it if you might tell me what you ate today, breakfast, lunch and dinner (+ any snacks). Doesn't matter if its a typical day or not.
I'm still in the transition from vegetarian --> vegan and since I don't know any vegans in real life it would really help.

Depending on the responses I might x-post this but I prefer to avoid snarky places, hence my preference for coming here!

breakfast - leftover risotto from yesterday's dinner, coffee
lunch - avocado roll, coffee
dinner - arancini (fried breaded rice balls), roasted veggies

uh... i don't usually eat this much rice. it's usually more along the lines of curry over quinoa for dinner (usually with beans or seitan in the curry for extra protein), and if i get breakfast it's generally a bagel. avocado rolls are a pretty common lunch for me, though.

I haven't eaten the healthiest but here's what I've had so far.

Glass of soymilk
Potato chips

breakfast: oats, banana, soymilk and coffee
lunch: lentils, rice, kale, little bit of salad
dinner: quinoa and black bean chili. probably have a pear for dessert and popcorn for a snack later!

1/4 package of tofu, fried in a teaspoon of olive oil, sprinkled with nutritional yeast, salt and pepper, on a slice of whole wheat toast, topped with about 3/4 cup of sauteed spinach and some lemon juice
Coffee with soymilk
an orange

Carrot sticks and hummus

Whole wheat tortilla wrapped around salad greens, shredded carrot, hummus and avocado

Air-popped popcorn with a sprinkle of olive oil, soy sauce, and nutritional yeast

12 almonds

Sweet potato/Black bean enchilada casserole with a spicy mole sauce, topped with diced avocado

slice of chocolate cake

Another couple of days that I happened to be able to cut and paste:

Dry cereal with soymilk and a banana, coffee with soymilk

1/2 Mango

Parsley-quinoa salad with garbanzos, raisins, almonds, lemon juice and olive oil

Red lentil curry with cauliflower, spinach and coconut milk topped with raisins and almonds

soy ice cream
Today we were on the road, so for breakfast I had oatmeal from the breakfast bar at the Whole Foods in Sonoma, fruit off the salad bar, and a soy latte.

Lunch we stopped at a Panera, where I had black bean soup, a piece of whole grain bread and a salad with no cheese. (my husband had the veggie sandwich, no cheese, my daughter had the PBJ)

And for dinner the plan is the lentil-oat-nut burgers that I make in big batches and freeze for quick dinners on the orowheat sandwich thins buns with steamed broccoli and oven fries.

2 chocolate-white chocolate chip with cherry cookies for dessert


So today I was in a hurry when I ran out the door, and so I had peanut butter and jelly on ww toast, a banana and coffee for breakfast.

We were at a potluck for lunch, so I had the quinoa-parsley salad that I brought, veggies with hummus, fruit salad, apples with peanut butter dip, and homemade vegan granola bars that someone else brought.

Dinner was our usual homeschoolers parkday standby- polenta with beans and greens

2 cups navy beans, 7 cups water, cooked all day in the crockpot-

add juice of one lemon, 1 tsp salt, dish out portion for the 5 year old.
add 3 cloves crushed garlic, 2 tsps dried sage, and a bunch of chopped kale, stir together, put lid back on for a few minutes.

Porridge with seeds, banana, sultanas, cinnamon and nutmeg, and ground flaxseed. Several cups of tea with soya milk.

Pasta with homemade pesto, salad, homemade apple and pear sauce.

Shared Chinese takeaway: veg chow mein, tofu in Szechuan sauce, tofu in sweet and sour sauce, fortune cookie.


Porridge with seeds, banana, sultanas, cinnamon and nutmeg, and ground flaxseed. Several cups of tea with soya milk.

Hummus and veg sarnie, roasted asparagus, fruit salad (mixed pineapple, melon and banana).

Dinner will be roasted potatoes, various mixed roast veg, Tuscan white beans and sauce, fennel and pear (sauteed with lemon juice, olive oil and salt and pepper).


Porridge with seeds, banana, sultanas, cinnamon and nutmeg, and ground flaxseed. Several cups of tea with soya milk.

Couscous and roasted veg, Tuscan white beans and sauce, fruit salad (pineapple, melon, banana).

Lemon and carrot dhal and saag bhajee with brown basmati rice.

-A can of black beans I seasoned with cumin, cayenne and pepper
-A red lettuce salad with alfalfa sprouts, red pepper strips, freshly prepared salsa and guacamole
-Lots and lots of alcohol. o_o

Today so far:

Another can of black beans mixed with the salsa (4 big tomatoes, a red, orange, yellow and green bell pepper, a big yellow onion and a couple cloves of garlic along with the juice of a lime (no cilantro because my dude mega dislikes it, but I would add it to my own)).

Breakfast - granola cereal with soymilk
Lunch - Bagel with hummus and tofu kan, an apple, a handful of cashews, a few pretzels
Dinner - An orange, a pizza-like thing with a tofu topping and lots of peppers and onions on top, we'll see what else

I'm a little heavy on the grains right now though, and I really don't eat enough greens. I'm in the middle of interviewing for graduate schools, so I don't have a lot of time for cooking this week. Hopefully after that I'll go back to my regular diet, which is healthier.

Okay, I ended up having a serving of packaged broccoli and carrots. That makes it a little better.

Black kale slathered in salad oil
Green smoothie (spinach, raw coconut juice, banana, spoon of flaxseed)

Lunch and thereabouts:
Pure Bar
Fruit salad
Sourdough demi baguette + more kale

Black bean soup

After dinner snack: Cereal and dried figs
